Oatmeal Peanut Butter Cookies

My husband really deserved something for his birthday treat today (he’ll also be receiving the traditional cheesecake later this week), and these are total keepers!  These cookies were a hit today with everyone that tried them, including the neighbors down the street.    I can honestly say I’ve never put so much peanut butter into one recipe, but they are my new favorite cookie.  🙂


1-2/3 cups all-natural peanut butter
1 cup Do-It-Yourself Olive Butter Spread
2 cups Sucanat or raw sugar
2 large eggs
1 egg white
3 tbsp honey
1 tbsp vanilla
1-1/2 sea salt
3 cups old-fashioned rolled oats*
1 cup whole-wheat pastry flour
1 cup dark raisins or dark chocolate chips (optional)
1 cup walnuts, coarsely chopped (optional)


  1. Preheat the oven to 350 degrees. Line baking sheetings with parchment paper or Silpat sheets
  2. Cream the peanut butter, Olive Butter Spread, Sucanat and eggs together in a large bowl until smooth. Beat in the honey, vanilla and sea salt.
  3. Use a large wooden spatula or your clean hands to work in the flour and oats until well combined. Add raisins and walnuts if desired. Mix well.
  4. Shape the dough into large balls and press into flat cookies. Place them on the baking sheets and bake for 12 to 15 minutes.
  5. Cool on wire racks.
