Lucky Ginger Spice Cookies

I hadn’t baked anything in awhile & was really wanting something sweet.  After many tastings (Thor & many of my co-workers), I think it’s a keeper!


1/4 cup Do-It-Yourself Olive Butter Spread (found in the magazine or one of her books)
1/2 cup Sucanat or other unrefined sugar
1/4 cup molasses, unsulfured is best
3 large egg whites
1-1/4 cups unbleached all-purpose flour
1/3 cup whole-wheat pastry flour
1 tsp baking soda
1 tsp ground cinnamon
Pinch ground cloves
1/8 tsp ground ginger
Pinch ground nutmeg


  1. Preheat oven to 350 degrees.  Prepare cookie sheets with Silpat or parchment paper.
  2. In a medium-sized mixing bowl, beat Olive Butter Spread until soft.  Add Sucanat & molasses & continue tomix well.  Add egg whites & mix until batter is creamy in texture.
  3. Combine all dry ingredients in a separate bowl.
  4. Add dry ingredients to wet & stir until well blended.  Drop large Spoonfuls of dough onto cookie sheets.  Bake for 12 to 15 minutes.
