Slow Cooked Pork Tenderloin with Mango-Peach Salsa

This is dedicated to my dear co-worker, Sue Pope.  Sue, our other co-workers, and myself had brought a potluck lunch for another co-worker’s birthday.  As we enjoyed all the lunch deliciousness, we started talking about other recipes we had made and Sue mentioned her recipe for pork tenderloin in the crock pot.  From the way she described it, the recipe sounded delicious & way too easy.  It really was superb and so easy to make you might just be in denial of how easy it is to make.

  • 1 pkg. pork tenderloin (this package should have 2 tenderloins in it)
  • 1 jar (48 oz.) Mango Peach Salsa (Costco)

  • Put both tenderloins and the entire jar of mango peach salsa in the crock pot.  Cook on low heat for 6-8 hours.  (I only cooked it for 6 hours because it was done, so watch it.)  When it’s done it should shred apart, and we used it for tacos.  SO EASY!!

  1. This is most excellent, and thanks for bringing it to my B-day party! It was so good I decided to make it myself, today (although for a variation I used a tomatillo salsa). So easy, and it came out great!
