Green Beans with Red Pepper & Garlic

You may have seen a picture of these in my Game of Thrones dinner night, and they were really tasty.  I’m always looking for new takes on the veggies I eat all the time.  Thank you Mayo Clinic.  🙂


1 pound green beans, stems trimmed
2 tsp olive oil
1 red bell, seeded & julienne
½ tsp chili paste or red pepper flakes
1 clove garlic, finely chopped
1 tsp sesame oil
½ tsp salt
¼ tsp freshly ground black pepper
·       Cut the beans into 2-inch pieces.  Bring a large saucepan ¾ full of water to a boil.  Add the beans & cook until they turn bright green & are tender-crisp; 1 to 3 minutes.  Drain the beans, and then plunge them into a bowl of ice water to stop the cooking.  Drain again & set aside.
·       In a large frying pan, heat the olive oil over medium heat.  Add the bell pepper & toss & stir for about 1 minute.  Add the beans & sauté for 1 minute longer.  Add the chili paste (red pepper flakes) & garlic & stir for 1 minute.  The beans will be tender & bright green.  Drizzle with the sesame oil & season with the salt & pepper.  Serve immediately.
