Chocolate Almond Cake :)

I would like to apologize for not being one with my blog this week.  My work schedule was kind of whack, and I think it threw everything else off.  No worries,  plenty of yummy things to blog about especially this number. 

 I made this dessert for a spontaneous dinner at Ms. Santa Barbara’s, and actually had my eye on it for awhile.  It’s another selection from Tosca Reno’s cooking collection.  My guests & husband loved the texture, how chocolatey it was, and how moist it was.  (Mama Tina has a thing about dry cake & I think she would really like this.)

The Eat-Clean Diet Cookbook 2 by Tosca Reno w/ Kierstin Buchner

Eat-Clean Cooking Spray*
1 cup, plus 1 tbsp whole wheat flour
1/2 cup cocoa powder
1/2 cup unrefined turbinado sugar
2 tbsp ground golden roasted flaxseed
1 tsp baking powder
1 tsp baking soda
1/2 tsp sea salt
2 egg whites
1/2 cup unsweetened applesauce
1/2 cup low-fat buttermilk
1/4 cup natural unsalted almond butter
1/2 tsp real almond extract
1 cup freshly brewed very hot coffee (I used decaf)
3 tbsp sliced toasted almonds


  1. Brew coffee.  Preheat oven to 350 degrees.  Coat a 9-inch round baking pan with Eat-Clean Cooking Spray & 1 tbsp whole wheat flour, discarding excess flour.
  2. Whisk together 1 cup flour, cocoa powder, sugar, flaxseed, baking powder, baking soda & salt in a large bowl.  Stir in egg whites, applesauce, buttermilk, almond butter & almond extract.  Carefully whisk in hot coffee until thoroughly combined.  Batter will be thin.
  3. Pour batter into sprayed & floured pan & bake in oven until a toothpick inserted in center comes out almost completely clean, about 40 minutes.  Cool 10 minutes and remove from pan to a wire rack.  Top with toasted almonds & cut into slices.

*Eat-Clean Cooking Spray is where you purchase a specialty spray bottle made for oil.  I used Pam.  About a month ago I found the bottles at Costco, but as usual when I went looking for them again they were gone.  😦
