A couple of weeks ago I was deciding the week’s menu and realized I hadn’t used one of my cookbooks that my mother had given me for Christmas a couple of years ago. “Cooking Light, 2008”, is a collection of recipes from the Cooking Light magazines for that year. I had actually thought about using it when I first got it, but my kitchen was the understatement of miniature at the time and who really wants to cook in a kitchen where it’s so small the refrigerator can’t even open entirely?? I knew you would agree.
So like I said I started using this cookbook last week & made ‘Fish Chowder’. Although normally I would make this type of recipe in the middle of winter myself because it’s such a hearty meal, but I had some halibut in the freezer & made it. Dave & I both thought it was pretty good. I thought it needed a little more kick, but I like my food well seasoned. (4 out of 5 stars.)
Speaking of food with more than a little kick, the recipe I made a couple of nights ago had plenty of kick and more. Chipolte Pork Soft Tacos with Pineapple Salsa was superb! I’d give it 4.5 out of 5 starts only because I thought I would add one more chipolte pepper because I didn’t think it would be hot enough; I was wrong. The pork was tender, the salsa added to the pork perfectly, and we used whole wheat tortillas to feel a little more healthy. The chipolte peppers had your mouth heated up well after you were done eating your dish. Bravo to Cooking Light!
